Mexican Avocado Soup


Ingredients

  • 1 medium avocado, peeled and coarsely chopped
  • 2 c milk
  • 1/2 c purpled onion, minced
  • 1/2 c chopped green chiles
  • 1/4 c sour cream
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 dash(es) ground red pepper
  • crushed tortilla chips, for garnish

Directions

  1. Place avocado in the container of an electric blender or food processor, and process until smooth.
  2. Combine pureed avocado, milk, and the next 7 ingredients; stir well.
  3. Cover and chill thoroughly. Ladle into individual soup bowls. Garnish, if desired.
