Buffalo Cauliflower


All the taste, without so many calories. This buffalo cauliflower is crispy, spicy, and better for you than the average buffalo wing.

Ingredients

  • 1 medium head cauliflower, cut into large florets
  • 1/2 cup flour
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons butter, melted
  • 2/3 cup bottled cayenne pepper sauce
  • Ranch dressing (optional)

Directions

  1. Preheat oven to 450 degrees F. Generously coat a large baking sheet with nonstick cooking spray; set aside.
  2. In a large bowl whisk together flour, milk, garlic powder, salt, paprika, cumin, and pepper. Add cauliflower florets; toss to coat. Spread evenly onto prepared baking sheet. Bake for 15 minutes, turning once.
  3. Meanwhile, in a large bowl stir together melted butter and hot sauce. Add baked cauliflower and toss to coat. Return cauliflower to baking sheet. Bake for another 20-25 minutes or until crispy, turning once.
  4. If desired, serve with ranch dressing.
