No-Bake Energy Poppers


Ingredients

  • 1 1/4 cups regular rolled oats, toasted*
  • 1/2 cup unsweetened shredded coconut, toasted
  • 1/2 cup flaxseed meal
  • 1/4 cup snipped golden raisins, dried blueberries, dried cherries, or dried cranberries
  • 1/4 cup sunflower kernels
  • 1 tablespoon chia seeds
  • 2/3 cup almond butter
  • 1/3 cup honey
  • 1 teaspoon orange zest (optional)
  • 1/2 teaspoon vanilla

Directions

  1. In a bowl stir together the first six ingredients (through chia seeds). In a another bowl stir together almond butter**, honey, orange zest (if using), and the vanilla. Add almond butter mixture to cereal mixture; stir well to combine. Shape mixture into 1-inch balls.

Tips

  • To toast oats, spread oats in a 15x10-inch baking pan. Bake at 350 degrees F 10 to 15 minutes or until toasted, stirring twice.
  • Place poppers between sheets of waxed paper in an airtight container; cover. Store in the refrigerator up to 1 week.
