Ingredients
- 1 1/2 lb boneless skinless chicken thighs
- 1/4 c ketchup
- 1/2 tsp minced garlic
- 2 Tbsp each, unsulphered cooking molasses & yellow mustard
- 1 tsp cumin
- 1/2 tsp pepper
- 1 1/2 Tbsp chili powder
- 1/2 tsp ground ginger
- 1/2 tsp worcestershire sauce
- 1 Tbsp brown sugar
- slider buns or can use regular sized buns
- sliced dill or sweet pickle chips
- coleslaw if desired to top
Directions
- Remove any fat from chicken, rinse and pat dry. Cut into 1 1/2 inch pieces.
- In a large skillet, add the chicken, ketchup, seasonings, mustard, molasses, garlic, brown sugar and vinegar. Stir together well and bring to a boil. Cover and simmer for 25 - 30 minutes or until chicken is tender.
- You can now tear chicken into smaller pieces or leave chunky.
- Serve on buns, topped with slaw if desired and serve with pickle slices.
