Carrot Nut Cheese Cake Bread


Ingredients

  • 1 c sugar
  • 1/2 c vegetable or canola oil
  • 1/2 c apple sauce
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 c grated carrot
  • 1 1/2 c sifted flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 c chopped walnuts
  • 1/2 c flaked coconut
  • 1/2 c raisins

FILLING

  • 8 oz softened cream cheese
  • 1/4 c sugar
  • 1 egg
  • 1 tsp vanilla extract

CREAM CHEESE ICING OPTIONAL

  • 4 oz cream cheese
  • 1/4 c butter
  • 1/2 lb powdered sugar
  • 2 Tbsp milk plus
  • 1/2 tsp vanilla extract

STREUSEL OPTIONAL

  • 1/4 c brown sugar
  • 1/2 tsp cinnamon
  • 3 Tbsp butter
  • 5 Tbsp flour
  • 1/4 c chopped walnuts

Directions

  1. Grease inside of large loaf pan. Preheat oven to 350°. You may also parchment paper line as I did. grease the pan first and then line.
  2. Chop your carrots in a food processor. Measure out your walnuts raisins and coconut and put aside.
  3. Measure oil sugar and apple sauce in a bowl. Mix well with spoon. Add in the vanilla and eggs. Stir well.
  4. Sift the flour cinnamon baking powder and salt together.
  5. Add to mixture to the egg mixture. stir to combine about halfway.
  6. Add in the nuts , carrots, raisins and coconut stir until combined. Do not over mix.
  7. Beat filling ingredients cream cheese etc. together. And set aside. Pour half of the bread batter into the pan.
  8. Pour cheese mixture over the batter. Top with the remaining bread batter. It does not have to be perfect. It is okay if some cheese shows through. Place all ingredients for streusel in food processor. Pulse until crumbly. Sprinkle over loaf. Place in oven and bake at 350° For 1 hr -
  9. 1 hr and 10 minutes, or until pick comed out clean.
Optional icing
  1. Beat cream cheese and butter together. 
  2. Add the powdered sugar beat well with the mixer. 
  3. Add milk a little at a time. You want it to be the consistency of a bundt cake icing. 
  4. Drizzle over warm bread. Cool. Let set and serve.
