Makes 1 dozen muffins
Ingredients
1 1/2 cups flour
1/2 cup oat bran
3/4 teaspoon salt
1/3 cup sugar
3 teaspoons baking powder
2 eggs
1/4 cup vegetable oil
1 cup milk
1 cup fresh cranberries, chopped
1 cup chopped walnuts
1 teaspoon orange peel, grated
Preparation
Preheat oven to 400°F. Mix flour, oat bran, salt, sugar and baking powder. Set aside. Beat together eggs, vegetable oil and milk; add to dry ingredients.
Add cranberries, walnuts and orange peel. Stir all together, batter may be lumpy. Pour into muffin tins and bake 20 minutes at 400°F.
