Cottage Cheese Dessert Pancakes

We've got a breakfast recipe that takes the cake. Prepared with the healthiest ingredients, these hearty pancakes can actually do double duty as a dessert. Your loved ones are sure to flip over this delectable dish.

Ingredients
2/3 cup cottage cheese
1/4 cup unsweetened frozen fruit juice concentrate, any kind
2 eggs
2 tbsp. safflower or other mild tasting oil
3/4 cup unbleached white flour
1/4 cup buckwheat flour
1 tsp. baking powder
Nutmeg

Methods/steps
In a blender, whip together cottage cheese, fruit juice concentrate, eggs, and oil. Pour mixture into a bowl, combine with flours and baking powder, and beat. Drop by tablespoonfuls onto hot (medium setting) oiled or buttered griddle. Sprinkle each pancake with nutmeg. After flipping and cooking completely, serve pancakes with nutmeg side up.
