Corn Salsa
When you're feeling corny, this is the perfect way to satisfy your hankering for something yellow. Even if you're an amateur in the kitchen, this scrumptious veggie side requires just a kernel of cooking prowess. Bake up a batch tonight.
Ingredients
1 (10 oz.) package frozen corn
1 (8 oz.) can tomato sauce
1 (4 oz.) can mushroom stems and pieces, drained
1 tomato, finely chopped (med to large)
1/3 cup celery, finely chopped
1/3 cup green peppers, finely chopped
2 tsp. olive oil
2 tbsp. brown sugar
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. salt
1 dash black pepper
1 dash cayenne pepper (optional)
Methods/steps
1. In 2-1/2 to 3 qt casserole dish, toss celery and green pepper in oil.
2. Microwave on high for 2 minutes.
3. Mix in all rest of ingredients.
4. Cover and cook on medium high until done for 9-10 minutes.
Additional Tips
As microwaves can vary in strength, you may want to check to make check it the first time you do it.
